100% Great Southern
Méthode Traditionelle - fresh and light with a fine bead and a crisp lively finish.
“Like the Jete wines, this new addition to the MadFish range is a methode traditionelle sparkling, which spent 18 months on lees. Pale straw with green glints and hints of brioche this blend of 80% Chardonnay and 20% Pinot Noir from Great Southern is super fresh on the palate, indeed slightly tart, with limey, grapefruity acidity. “Pale straw-yellow-gold; a blend of chardonnay and pinot noir from the coolest sites in southern WA, it is lively and fresh, with fine grapefruit and stone fruit flavours, and attractive nutty/spicy yeast influences; good length and balance.”

Good Sparkling wine is made from grapes grown in only the coolest climates in which the delicate aromas, flavours and natural acidity are preserved producing light, fresh and fine wine.
The Chardonnay and Pinot Noir grapes for this wine are from a single vineyard in the southern-most grapegrowing region of Western Australia in Denmark in the Great Southern.
The grapes were hand harvested and processed in the Méthode Champenoise.
Painstaking juice extraction from whole bunches tipped by hand into the press produced pristine low phenolic juice which was fermented to dryness in tank at low temperature, again preserving the natural delicate characters of the grapes. The resultant wine then underwent the secondary bottle fermentation to produce the sparkle.
Over two years resting on the lees in the bottle aided the development of some more complex flavours and aromas. The sediment was then settled by traditional remuage prior to degorgement, corking and muselet application.
This is an Australian wine made using the most traditional hand crafted techniques.
The colour is very pale with no hint of the red Pinot Noir grapes used in its formation. The nose is fresh and light with citrus and floral aromas complemented by some bready characters. The palate is again fresh and light with a fine bead and a crisp lively finish.
The MadFish Vera's Cuvée Sparkling White NV is an aperitif style best enjoyed young with friends and food and lively conversation.
