Appellation d’origine Controlée: Nuits-Saint-Georges
Vineyard: "Blend of three plots:Les Allots and la Charmotte in north of Nuits-Saint-Georges towards Vosne-Romanée, and Les Maladières towards the south of Nuits-St-Georges."
Soils: "The plots to the north have shallow soils with some fine slope run-off 'colluvions'. The soils in the Northern sector derive from pebbly alluvium washed down from up-slope. South of Nuits-Saint-Georges we find very stony clay deposits. The alluvion at the base of the slope originate in the combe of Vallerots where there are deep marly-limestone soils"
Maceration process: 100% destemmed, seven days of cold maceration, one "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction.
Pressing: Pneumatic press
Vatting time: 18 days.
Total ageing: 16 months
Oak used: French oak barrels 30% new, medium toast from Allier, Jupilles and Nevers forests
Operations performed during ageing: One racking after the malolactic fermentation.
Filtration: No fining, no filtration.
All vinification and ageing operations are carried out with reference to the lunar calendar.
