Tasting Notes
This wine shows clearly the benefits of diverse village holdings in Gevrey. A blend of five plots, complexity on the nose unfurls in layers with aeration. Strawberry, Morello cherry, blackberry, violets, rosehip, anise and vanilla are the aromatic entrée to a seductive yet structured palate. Powerful fruit is cushioned with delicate spice notes, tannins are present and welcoming. The ultimate balance of this young wine makes it easy to enjoy on the fruit, with an assurance that the mature mushroom, mineral and earth complexity of Gevrey will richly reward after a decade in bottle.

Vineyard: Wine coming from Creux Brouillard, Murots, Les Crais, Jouise and En Champs, Les Seuvrées.
Soil: Les Crais is characterized by a high proportion of limestone. Jouise and Murots by a brown limestone soil, well drained, slightly exposed to the east. Les Seuvrées, mostly calcareous soils with a good proportion of marls.
Maceration process: 20% whole bunch, short cold maceration, one pigeage a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction
Total vatting time: 20 days
Pressing: Pneumatic press
Total elevage: 16 months
Oak used: French oak barrels 20% new oak, light and long soft toast from Allier, Jupilles, Fontainebleau and Nevers forests
Operations performed during ageing: One racking after the malolactic fermentation
Filtration: No fining, no filtration
All the vinification and ageing operations are carried out with reference to the lunar calendar.
