Tasting NotesThe vineyard was acquired from Henri Boillot in 2014, farmed biodynamically with vine age ranging from 20 to 65 years, on the mid-slope of Savigny with excellent drainage and limestone rich soil. The aromatics are striking with complex floral perfume intermingling with raspberry, dusky plum and white strawberry seeds. Energetic, elegant, rounded, fresh and structured, with that balance of delicacy and concentration that speaks truly of the Côte de Beaune. You can decide whether to embrace its youthful charms or celebrate its inevitable glorious maturity. Alcohol 12.5%

40% whole bunch, short cold maceration, two pigeage a day during the alcoholic fermentation, then short pump-overs during maceration post alcoholic fermentation.

Oak used: 20% French new oak, barrels from Jupilles forests.
Operations performed during ageing: One racking after malolactic fermentation.
Filtration: No fining, no filtration All the vinification and ageing operations are carried out with reference to the lunar calendar.
Vineyards: Our Lavières vineyard is located on the bottom of the hill down below our Savigny 1er cru Vergelesses.
Soils: The Lavières name comes from lava which defined the type of limestone here. This particular soil provides very good drainage.
