A gentle coral pink in colour with aromas evocative of Peach Melba – raspberry coulis, yellow fleshed peach and vanilla cream. Soft red berries and juicy stone fruits flavour the palate and a fine chalk-like savoury note gives length and texture. This is a supple and intricate wine filled with layered complexities to encounter, uncover and enjoy.

Made from a gentle and short extraction to obtain only the lightest tinges of pink from the red grape skins. After extraction, the wine is largely made in the same way as white wine. The juice ferments naturally in older French oak and the lees are stirred weekly from later in the fermentation until dry. During the short oak maturation, partial malolactic occurs.
The wine was minimally fined and filtered prior to bottling in August 2018.
Fruit and Juice Handling
Picked at a ripeness of 12.5⁰ and maintained for a few hours on skins before gentle pressing to extract fine flavours, soft tannins and subtle colour.
Fermentation & Maturation
After minimal settling, the juice ferments naturally in older French oak. Fermentation temperatures reach 22⁰C and the lees were stirred weekly from later in the fermentation until dry. During the few months in oak and on lees, partial malolactic occurred.
