Tasting Notes
A youthful ruby red in colour with purple hues. The bouquet is a mix of fresh berry fruits and sweet toasted oak. Rich in classic Cabernet notes of sweet blackberry and blackcurrant, rubbed dry herbs and soft cocoa and mocha spice, the palate’s opulence is shaped by a fine tannin structure and bright acidity. This wine is definitively Cabernet – fine, pure and perfumed, with great length of flavour, balance and poise.Cellaring
The cellaring for our Howard Park Cabernet Sauvignon is from 10 - 20 years.Winemaking
Harvest occurred from late March to early April 2016. Small parcels are hand-picked and sorted to remove matter other than grapes before fermentation. Fermentation occurred in headed-down closed stainless and small open vat steel fermenters. Selected parcels remained on skins post the fermentation to further enhance the tannin profile while others were pressed at dryness to capture fruit vibrancy. Each batch is matured separately in order to build a wine history over time.
